I used up the rest of my Birsay Beremeal at the weekend in some savoury muffins.
You really can’t get a much easier recipe than a muffin – just mix your dry ingredients with your wet ingredients, spoon into muffin cases and bake!
I supplemented my beremeal and wholemeal flours with a little white plain flour as I didn’t have quite enough to make a double batch. I only had some mature cheddar but will definitely be trying these with a mixture of cheeses. Great with a bowl or soup or well-buttered on their own.
