Merry Christmas everybody from the Mess in the Ness!
Today I’m sharing another few pictures (and links to the recipes so you can try them yourself!) of another bake I made for a tea-break at work last week. As well as the sticky toffee traybake, apple & blueberry muffins and bounty bites, I also made some peppermint candy cane cupcakes!
I have a copy of Cupcakes from the Primrose Bakery which I won about two years ago from Domestikate, and I remembered that the book is structured into seasons. Once I saw a peppermint buttercream icing, I knew this was to be paired with their chocolate cupcake sponge recipe.
The recipe for the buttercream is flawless, and you can either pipe or spread it with a palette knife.
I topped with mini candy canes, as well as some crushed candy cane pieces. I love my festive cupcakes and they went down very well at the teabreak too! See here for the recipe.
