I started my new part time working arrangement last week, so I get Thursdays and Fridays off. Fridays will be Mr B’s new day off, so we will aim to get in a good walk somewhere (and probably a local lunch as a reward). Thursdays will be reserved for housey stuff as well as fun stuff I have on the to-do list. Last Thursday I had a variety of jobs around the house that needed attention, one of which was baking for our Bible study group that we host fortnightly, so to my bookcase of recipe books I went in order to keep to my 2015 Cooking the Books challenge.
This great little book – 200 Cakes and Bakes is not a new purchase at all and I’ve used it on a number of occasions however out of 200 recipes listed, I’ve used about 4 – talk about being a creature of habit! So I resolved to try a new recipe from there.
I settled on a traybake – white chocolate and apricot blondies. I subbed the apricots for some cranberries, which in my opinion make a much better partner for the sweet white chocolate. It was also my opportunity to use my new Kenwood Kmix Stand mixer which arrived earlier in the week. No pictures of this yet but I’ll include it in February’s “New in my Kitchen” post as it is a pretty substantial bit of kit. I enjoyed being able to do other things while it whipped up my eggs and sugar in no time at all!
