I got this months Bakes Box through the post a few weeks back, and when I opened it, I could see it was going to be a real showstopper of a bake – being a four layer sponge, with eton mess cream layers, meringue kisses and a berry coulis!
Making meringues have never been a hassle free process for me, in the past I’ve never made a successful meringue, so I was a bit nervous that I was going to have a disaster. The recipe interestingly listed heating the caster sugar up in the oven for five minutes before whisking it into the stiff egg whites.
Fortunately my meringue turned into a lovely stiff white glossy mix, so I was ready to pipe my kisses. I did a variety of sizes and they baked well at a low heat for about 40 minutes.
After the meringues were out of the oven, I was much more in my comfort zone making the sponges, eton mess cream and berry coulis!
I absolutely loved making this, all the different elements combined make a delicious bake, I would definitely make this again in summer when berries are more in season!
