Here’s the cake I made on Monday as I’ve had a couple of requests, I replaced the apples in the recipe with pears and a truckload of cinnamon!
500g apples ( I used pears),peeled and thinly sliced
2 tbsp water
A little lemon juice
250g white bread flour (I had none, so used 250g self raising flour(
2.5tsp baking powder
1 tsp cinnamon (I used a lot more instead of a combination of the following)
1 tsp ground ginger
1 tsp nutmeg
175g caster sugar
3 eggs beaten
Put half the fruit slices in a small saucepan with the water, then cover and simmer for 5 mins until pulpy. Put the remaining slices in a bowl of cold water and the lemon juice.
Mix flour, baking powder, and spices in a bowl.
Cream butter and sugar until light and fluffy. Gradually mix in alternate spoonfuls of beaten egg and the flour mix, until all has been added and the mixture is smooth. Stir in the cooked apple/pear.
Pour the mixture into a lightly greased 23″ tin spring form cake tin. Drain the remaining fruit and arrange the slices in rings on top of the cake mixture. Sprinkle with sugar and cinnamon. Bake at Gas 4, 180c for 35-40 mins.
Serve with crime fraiche, yoghurt or custard.
