Just a quick post from me today. I had some lemons and white chocolate chunks, so I scouted this recipe from Sainsburys Magazine. They took about 5 minutes to make, and 30 minutes to bake! The only thing I changed was a sprinkle of dark brown sugar instead of the suggested Demerara. The result was a crispy creme brûlée-like top to an otherwise light and fluffy muffin.
