There’s nothing better on a wet and windy autumn day than to cosy up inside with a slice of cake and a cup of something hot.
A quick and easy bake is Nigella’s tea bread. A thick fruit cake jam-packed with fruit. I’ve made this twice in the four days – once following the recipe exactly and then again last night adding in a couple of easy twists. One of the great things about this tea loaf is that there’s no butter, making it a low (er) fat cake. So therefore, guilt free! Maybe.
Nigella’s suggestions are to serve as is, or with a spread of butter (no surprise there – Nigella does love her butter!) I served warm straight from the oven, on its own as with the apple added, it was so moist. The addition of marmalade makes the cake a little denser than a traditional fruit loaf, and a little sticky around the edges. A good choice for some autumnal comfort!
