It’s long been an aim of mine to be able to make a steamed pudding. Despite not being the most difficult recipe in the world I felt that it was too much effort. Today I put in the small amount of required effort and I was richly rewarded!
I recently bought The Slow Cook Book (I bought from The Works, it was £5) as I quite often see recipes that I would like to do. and this book is great as it gives you the same recipe instructions whether you are cooking it in the oven or in the slow cooker. Last night I made a hearty sausage and lentil casserole in the oven, and this morning I made a Lemon Sponge pudding in the slow cooker!
Although not the most finessed pudding ever, it was comforting and warm – perfect for a cold evening!
