I had a really relaxing weekend – after I got back to work on Friday morning following a 7am flight from Heathrow and a very short but lovely trip in London, I was very relieved to be able to leave the office at 1pm and get home so I could take a nap! I also had a lovely Friday night – as we hadn’t ‘celebrated’ Valentines Day on the 14th, Mr B cooked me a delicious 3 course meal at home. The menu was:
- Red Pepper and Chorizo Toasts
- Salmon on a bed of Sweet Potato and Quinoa, trimmed beans, topped with a honey, lemon and orange glaze
- Strawberry, Biscuit and Marscapone Sundae
In other words, all my favourite things to eat in one evening – Yum! (I think that all of the recipes could be found on the BBC Good Food website).
On Saturday, Mr B was away early to Coulston Cookery School to learn all about Indian Cuisine – this was a present I bought him at the end of 2011 for him to pick a cuisine to learn more about – he has brilliant cookery skills already so he definitely didn’t need to improve those (and we’re eating the fruits of his labour for dinner tonight). So I upped myself from bed at the same time and got dropped off at the gym to go for a swim (or so I thought until I got into the changing rooms I realised that children’s swimming lessons were on at the same time- doh!) so I walked along the beach back in the direction of Kinghorn and then hopped on the bus.
A bit later I then headed into St Andrews to meet a friend for lunch and was then able to walk down by the harbour and cathedral. It was such a nice relaxing day! I also bought some stewing steak and had my first attempt at making a steak pie, which worked really well.
