This weekend is our 2 year anniversary of Mr B and I starting to date, and we’re about 6 weeks away from our first wedding anniversary. After going out for dinner last night and seeing the final Batman film in the trilogy (it’s ace, go see it!) today was leisurely.
We made the most of the good weather, and continued our efforts on the Fife Coastal Path from Dysart Harbour to West Wemyss (pronounced ‘Weems’ rather than ‘Wem-is’) which was about 4.5 miles along past some remnants of the coal industry, some massive caves and also a cool mural which appeared out of nowhere (pics in slideshow below). We’re loving the FCP, and will hopefully be getting out on the rest of our summer weekends (which aren’t many left now, with various holidays and weddings we’re looking forward to!)
Returning home mid afternoon, I decided to bake. I chose Whoopie Pies as this was one of the things Mr B and I baked (yes we had a bake date!) prior to ‘going out’ officially, so seemed appropriate. I used this recipe as all other ones required chocolate, and I only had cocoa. It was a really easy recipe to follow, and the resulting cakes were great – slightly chewy sponge which wasn’t too sweet, and the filling was similar to a glossy thick cream – but not like buttercream. The sponge and filling complemented each other really well, and of course they went down well with Mr B!
