I saw Paul Hollywood on TV a few weeks ago making biscotti, which I thought would be a good addition to my Secret Santa gifts I sent last week.
Biscotti can keep for up to a month in an airtight tin due to the biscuits containing no butter and A LOT of sugar, and obviously there’s less risk in a twice baked biscuit breaking (now there’s a tongue twister!) in the post than a cake of some kind – and I wanted to send something homemade with the purchases I had bought!
The recipe is available here. I made just one of the variations – orange, almond and chocolate (I used white chocolate chips instead of dark chocolate). I don’t know if it was just me , but the mixture was REALLY stiff to mix – definitely a good workout for the upper arms!It was also quite sticky when rolling out into logs (which incidentally looked like MASSIVE POOS on the baking tray which caused much hilarity for me and my friend Donna when taking pictures). The baking process was very easy – and it was fun to see the biscotti drying out on each side as they were undergoing their “2nd bake”. Definitely a bake I would recommend with your morning coffee/chai latte! I will be trying these again with some other flavour combinations!
