Just a quick post from me today.
I had a couple of over-ripe (and huge!) bananas. Normally I make a banana bread but wanted to try something else. I haven’t made muffins in ages, and I didn’t have any butter to hand anyway, which is just as well, as the recipes I tend to use recommend a mix of eggs and vegetable oil. So this recipe from Nigella seemed to suit! Looking at the comments, the main advice seemed to be that extra flavours should be added. So I added a shake of 70% plain chocolate chunks and a couple of chopped white Lindt squares. 10 minutes of mixing and 18 minutes of baking in a 200degree oven and there you have some quick and tasty muffins!
