After getting “Save with Jamie” for my birthday, we had been thinking about how we can buy a whole joint of meat in order to have a meaty roast feast, as well as getting lots of leftovers for weekday meals!
Last week we noticed that Tesco were running a promotion on their whole joints of Pork Loin. We got a 2.3kg joint for just over £10 – bargain! I then scoured the interwebs for a good recipe that I could use in our slow cooker. Loads of them had fennel seeds in, which we are both not keen on. Eventually I found this recipe which seemed (and was) really easy with ingredients we already had! We amended the recipe though a little:
- I put the cinnamon in with the initial glaze mix (I wish I could say that this was deliberate, the reality is that I had got up at 6am to prepare the glaze and I was very sleepy – and keen to get back to bed after the joint had gone into the slow cooker!)
- After 6 hours, I scooped out some of the juices, (there was quite a lot) but also left some in.
- I didn’t add in the 1/3 cup of sugar, it just seemed a little bit too much sugar to me!However I think I could have got the joint out after 7 hours – I left it in for an additional hour, and it was a teensy bit dry as a result.
As well as a nice helping of Sunday roast pork (which I served with a nice wholegrain mustard mash and some broccoli), we have 4 bags (9 portions) of pork sitting in the freezer waiting to be used up. On Friday Mr B is going to serve up a variation of this Jamie Oliver recipe for Pork tacos which look delicious!
