After a long evening last night enjoying the Olympic opening ceremony with friends, we are pretty much stuck inside today as the weather is dreadful! However, there was excitement on my part as the September issue of Good Food magazine arrived. As usual I pored through the recipe and there were some ones that I will definitely be trying, including a pea and pesto soup which I will be trying tomorrow! However today I was in the mood to bake and I found a recipe for a cake that contained 350g of courgette and no butter, but vegetable oil!
Mr B did not look too impressed when I suggested that I was going to make this, especially when I read the recipe more closely and found it contained walnuts (Mr B has an intolerance to some nuts), so I made some adaptations:
- I took out the brown sugar (as I had none) and replaced with regular caster sugar
- As well as taking out walnuts, I also removed the vanilla extract and nutmeg and replaced with the zest and juice of a lime
Verdict A great flavoursome cake which was not too sweet, and MUST be good for you considering the amount of courgette…. right!?
