I was talking to Mr B earlier and saying that life feels quite normal at the moment. There’s no big life event that we’re planning for any more, Christmas has been and gone, and it feels like that all we need to think about at the moment is the day to day life stuff which is a nice feeling to have. A result of this is that I feel more relaxed and we’ve been able to take a lot more pleasure in cooking meals. We’ve now made a few recipes from the March Issue of Good Food Magazine:
Garlicky Linguine with Anchovy and Cabbage – yummy, though very very salty -it took us back to our honeymoon in Sicily which I think my salt intake must have quadrupled for 10 days! We also used garlic and basil linguine (from Asda) which gave our dinner an extra flavour.
Butternut Squash, Feta and Spinach Pie – this was such an easy recipe to do and filo pastry was a yummy topping!
Chicken, Bacon and Potato Stew – I used my slow cooker for this recipe and let it cook for about 4 hours. By the time it came to serve the chicken was falling off the bone and was flavoured really well with white wine, thyme and stock. To thicken the sauce at the end, I added some buttermilk which worked well. Yum.
I also was able to use some buttermilk for this Scone recipe – they were so light and fluffy and I’ve had to hide the supply from Mr B as they went down a treat! Really good with jam and creme fraiche. Here’s a pic of how they turned out:
Tomorrow night we are meeting friends I knew in London who are spending halfterm in Edinburgh and we’re going to Hendersons of Edinburgh for a meal. I have ‘Hendersons at St Johns’ right opposite me at work and I had the most fantastic salad there for lunch on Friday with hazelnuts, chicken, roasted veg and feta. I got my lunch to take away but I was very tempted to eat in as the cafe was beautiful, complete with a guy playing the piano, however I was worried that I might forget to go back to work after my lunchbreak (not that my work is horrible) just that it was SO nice in there!
This week is not a normal week – for example I am heading down to London for a couple of nights, which I am SO excited for. An exciting thing that we’re doing to celebrate Valentine’s Day is that we’re each having a ‘night’ to surprise each other with a present/activity. Of course I’m not going to share what I’m going to do for Mr B yet as his ‘night’ is not until the 29th Feb – it’s nothing too elaborate but things that I know that he really likes and appreciates. My ‘night’ is on Friday, and Mr B is not giving any clues away!
