It’s been a while since I did a ‘Cooking the Books‘ post, despite purchasing a good few recipe books in the last few months!
We are big fish-lovers in the Barrie household, and I in particular love salmon in any form. I bought this Salmon Cookbook by Paula Ahlsen Soder in the Works (for only £4) and have already poured through it and picked a few recipes that I’m keen to try.
Last week in Morrisons, I picked up a piece of salmon (almost 440g for £4) and oven baked it with some homemade pesto. The quantities given in the book actually made tons of pesto so we’ve had enough to use it with pasta for two meals as well! Salmon is so easy to overcook so I was keen to keep it nice and tender. I served it on top of a small scoop of mashed potatoes and a spinach, tomato, avocado and basil salad. The salmon could have possibly fed three people but we love our fish and it felt a nice healthy dinner. One to repeat again!
