Honey & Co’s Spicy Cauliflower Muffins

I’m a self-confessed Honey & Co fan, I’ve eaten at their restaurant in Central London twice – on my previous two visits to London. They do just the most wonderful middle-eastern food and you really do have to book ahead to ensure you get a convenient reservation! I saw their second book on the library shelves before Christmas, but haven’t really got round to looking at it properly until well into January. However, as I’ve been looking for fun recipes to take to work for lunch, as soon as I saw these cauliflower muffins, I knew that these could fit very well into my lunchbox!

They don’t take very long to whizz up – the recipe can be found here and as the spices richly colour the batter, the white cauliflower trees really stand out! The only change I made to the recipe was to change the topping slightly. I mixed 4 teaspoons of pine nuts to the same quantity of sunflower seeds, and also crumbled some feta in too. Possibly my new favourite savoury muffin recipe!
