A few weeks ago at Taste of Grampian, I stumbled across a new (to me!) company called DipNation who are based in Fife, Scotland.
DipNation produce a range of chunky dips (as well as classic dips like pesto). However, these dips can also be used in cooking too and this what intrigued me most. At Taste of Grampian I picked up two chunky dips and a classic dip to try.
Last week I tried out the spinach and feta chunky dip in a recipe, using a recipe card that I picked up with the dips.
The dips I bought all came with a shelf life of around 6 weeks and was in a very secure plastic tub, and the recipe was really quick and easy to follow as I already had some cooked chicken defrosted. The eagle-eyed among you will notice that this dip (as do all the others) contain cashew nuts – don’t worry, Mr B’s allergy doesn’t extend to these!
I was only cooking for two, so I halved all the ingredients (but did add in 6 mushrooms as they needed using up).
I was pleased with my white sauce, which was lump free due to some good whisking, before I added the Spinach and Feta dip.
I served with a salad and also some garlic bread that I found lurking in the freezer. I would definitely cook this recipe again – I often find in the summer months that a traditional lasagne is too heavy and rich, but this was a very good alternative,and there was definitely a nice feta tang to the sauce. I’m glad I added in the mushrooms to pack in the extra veg, again I would be tempted to add in an onion or a leek if I were to cook this again. I used fresh lasagne sheets so I didn’t need to pre-cook these, which meant that the whole dish was ready in about 45 minutes, so it’s an easy dish for a midweek meal or for entertaining.
I didn’t receive any incentive for this review post – I enjoyed this product so much that I wanted to share the Dipnation love! We also had another lovely meal using the Butternut Squash and Chilli dip in a chicken risotto on another occasion .
I used my Spinach & Feta one with a spaghetti recipe & it was delicious! They’re super versatile aren’t they?
