Lemon and spice cookies

One of the reasons that I love baking is that you don’t necessarily need fancy ingredients or bucketloads of time to whip up something sweet and tasty.

These lemon and spice cookies are one such example. Containing common spices found in any kitchen store cupboard, they take about 30 minutes in total to assemble and bake.

I used equal quantities of ground cinnamon, ginger, and allspice to give a rounded flavour but you could adjust this to your own personal taste. You could always use the zest of the orange if you don’t have a lemon to hand.

Lemon and Spice Cookies

  • Servings: 10-12 cookies
  • Time: 30mins
  • Difficulty: easy
  • Print

  • 100g plain flour
  • 1 tsp baking powder
  • 0.5tsp bicarb of soda
  • 1.5 tsp of spice (I used equal quantities of allspice, ginger and cinnamon)
  • grated rind of 1 lemon
  • 55g butter
  • 55g caster sugar
  • 2 tablespoons of golden syrup (you could use maple if you wanted to)

Preheat the oven to 180c fan/190c.

Mix all the dry ingredients (apart from the sugar) together, then rub in the butter until you have fine breadcrumbs.

Stir in the sugar, then stir in the golden syrup with a spoon. Then use your hands to bring the mixture together into a ball.

Shape the ball into a log, then cut into 12 pieces. Roll each piece into a a ball and place on a tray lined with greaseproof paper. Make sure that you space the balls of dough evenly on the tray – I would suggest not baking more than 6 cookies onto a tray. There’s no need to flatten the doughballs down.

Bake for 9 minutes or until the tops of the cookies and golden and cracked. Remove from the oven and leave to harden for a couple of minutes.
