Why these are called surfer pancakes I’m not sure, but this recipe from the Innocent Cookbook is my go-to pancake recipe if I want light and fluffy american style pancakes. There’s no weighing out of ingredients, just the use of a cup, as well as the odd ‘handful’ or ‘pinch’ of ingredient – perfect if you want pancakes but can’t be bothered to reach for the weighing scales. These make a delicious stack (we got 7 massive pancakes out of our mix) and we added blueberries and banana to our pancakes as soon as we added a ladleful of batter to the pan.
Normally I can’t share the recipe from the book as it would infringe copyright laws, but seeing as Innocent have shared the recipe online – you can see it here for yourself. The whipping of the egg whites might seem like an unneccessary step, but when added to the porridge light batter, it transforms it into a much lighter mix – so don’t miss it out.
