For this month’s Let’s Bake we had our own little cocktail party in a local bar, with sweet and savoury bakes!
I decided to make some scotch eggs. I had originally intended to make them with quails eggs so that they would be quite delicate little things, but I was having a dozy moment when I ordered usual eggs in our food shop. So I went with a Jamie Oliver recipe for ‘Proper Scotch Eggs’ although I decided to bake them instead of deep frying them in an attempt to make them a little healthier!
They are a bit of a faff and I felt that I was constantly washing my hands as I was layering my hands with flour, egg wash, and breadcrumbs – that was until Mr B got roped in to mould the sausagemeat round the eggs!
As I mentioned, I baked the eggs but this was perhaps not the wisest decision as the eggs didn’t go the lovely golden brown that I was expecting! They were still lovely with a lovely mustardy tang to the sausagemeat.
