We are heading off on our holidays next week, so we are trying to use up our food stock as much as possible.
Tonight’s dinner was pizza – using a packet base mix from Tesco, and a salad using up the last dregs of good leaves and other random things left in the fridge (nectarine, spring onions and cucumber)! I was a bit apprehensive using the packet mix, but we followed the instructions to the letter and our pizza base turned out nice and crispy!
- Combine an assortment of leaves, cucumber, spring onion and the flesh of a nectarine. We also seasoned the salad with salt, pepper as well as a drizzle of red wine vinegar and olive oil

- Throw some toppings onto a drained tin of chopped tomatoes – a couple of mushrooms, half a red onion, cherry tomatoes, oregano. We also added some Mill of Kintyre cheddar halfway through cooking
- I love roasted cherry tomatoes – so tasty!
