The ultimate in non-baking 'baking' – Mint Rocky Road

I signed up to supply some baking for a parent/toddler group, and, as I sometimes do, forgot about it until relatively last minute, when I had limited time to bake something. So why bake something, when you can ‘non-bake’ some yummy treats! You really can’t get any easier than Rocky Road, I had seen this recipe so adapted it for my purposes:

200g bar plain dark chocolate, broken into squares – I used a combo of milk and plain chocolate, as that what was in my cupboard!

100g butter

397g can condensed milk   I used a good squeeze of golden syrup

200g digestive biscuits (about 14)

A sharing bag of Mint  mini Matchmakers – these give a really nice ‘gritty’ texture to the traybake.

A good shake (probably about 50-60g – I wasn’t counting!) of mini marshmallows, to add a touch of fluffiness to the crunch of the biscuits and matchmakers

5 EASY STEPS

1/ Line a 20″ square tray with baking parchment

2/Melt the chocolate, syrup and butter over a low heat, leave to cool

3/While the chocolate etc is melting, bash the biscuits until crushed, and chop up the mini matchmakers

4/ Add the biscuits, marshmallows and matchmakers to a bowl, then spoon in the chocolate mix

5/ Freeze for a couple of hours, then chop into small/medium squares. I got 30 squares from mine.

I used a mix of plain and milk chocolate that happened to be in the cupboard
I like to keep the biscuits fairly chunky in size to get the variety in texture
