Tried and Tested: Chocolate Truffle Cake

January 12, 2012 by Susan Leave a Comment

Tonight, with it being my last night of being home alone, I thought I would do some baking. We did secret santa at work last month and I was the lucky recipient of a baking book. I was feeling like I wanted to make one big cake rather than muffins/cupcakes so I flicked through the book and found a lovely looking chocolate truffle cake. (Yes the name alone sounds calorific and I’m afraid that there’s no low fat/fat free content here). It was really easy but for some reason I was having a clumsy evening with dropping an egg, generally misplacing stuff and burning my hand, baking was quite a stressful experience! However, all turned out well in the end.

Sampling some crumbs I think the consistency is basically like a very fudgey rich brownie but on a massive scale. It apparently serves 8 but it could do 10-12 thinner slices if you were being good and serving it with some berries. Hopefully it will go down well at work tomorrow!
