A few weeks ago, I had some limes, white chocolate, eggs and butter that we all nearing their Best before date. I had an internal debate (lasting a good hour or so!) as to whether I should make cake or biscuits. I finally settled on biscuits and opted for this easy Biscuit dough, courtesy of BBC Good Food. To this mix, which I separated into two batches,I added:
Batch 1 – zest of 2 limes – zingy!
Batch 2 – a good handful of chopped white chocolate
On the top of the lime batch, once the cookies were cooled, I mixed icing sugar with a couple of tablespoons of lime juice to give even more of a citrus flavour, drizzled over the top of the cookies and topped with yet more lime zest! I kept the white chocolate batch deliberately plain, but if I had some milk or plain chocolate in, I would have drizzled some over the chocolate cookies to make them look a bit more interesting!
